Spring Pasta Salad

Pasta Salad nutrition nutrition360This colourful pasta salad is packed full of antioxidants, protein and long lasting energy. Also a great source of fiber which helps with weight maintenance and bowel regularity.  It is quick to prepare and a hit for the whole family, pre- packed lunches or for a BBQ or potluck meal.

Pasta Salad Ingredients

  • ½ box smart or whole wheat pasta, cooked and drained
  • 1 can chickpeas, drained and rinsed
  • ½ large red onion, finely chopped,
  • 2 large tomatoes, chopped
  • ½ large cucumber, chopped
  • 1 head broccoli, cut into florets and lightly steamed
  • 4 cups spinach, steamed and chopped
  • ½ can black olives, sliced
  • 1/3 cup feta cheese, crumbled
  • garlic infused extra virgin olive oil, 2-3 Tbsp
  • finely chopped cilantro (optional)
  • tin of tuna or salmon or grilled chicken breast (optional)

Method

  1. Combine all ingredients into a bowl, mix well and serve
