Whole Roasted Cauliflower

roasted-cauliflower-pictureAn easier and healthier take on cauliflower with cheese with hint of curry spice.

Ingredients

1 cauliflower, trimmed
1 cup plain yogurt
1 cup grated cheese
2 tsp garlic cloves, minced
1 tsp cumin
1 tsp smoked paprika
½ tsp sea salt
½ tsp pepper
5 Tbsp butter (optional)

Methods

  1. Preheat oven to 375F
  2. Steam cauliflower in a large pot fitted with a steamer basket and 1 inch of water. Cover and cook over medium heat for 8 min. Remove cauliflower and let stand in basket for 5min. Transfer to casserole dish
  3. Stir yogurt with cheese, garlic, cumin, paprika, salt and pepper in a medium bowl. Spoon yogurt mixture over cauliflower to coat evenly.
  4. Roast until cauliflower is fork tender, about 20min. Broil until top is golden, about 3min
  5. Bon Appetit!
