This is an easy to prepare, nutritious and great tasting dessert. Packed full of protein, fiber and antioxidants!Ingredients
- 7oz (~2cups) fresh or frozen blueberries or alternatively can use 2 tins of drained fruit in juice such as pineapple, peaches, pears or apricots
- 4 eggs
- 1 Tbsp self rising flour (can also used gluten free mix for a gluten free dessert)
- (can make your own with ~1 Tbsp flour and ~1/8tsp baking powder)
- 1 tsp vanilla
- 1 Tbsp maple syrup or honey
Method
- Pre-heat oven to 180°C. Spray a medium size baking dish lightly with oil.
- Evenly spread fruit to cover the bottom of dish
- Beat eggs in medium size bowl
- Add all remaining ingredients and mix
- Pour mixture over fruit and bake for ~30min or until center is firm to touch
