This is an easy to prepare, nutritious and great tasting dessert. Packed full of protein, fiber and antioxidants!Ingredients

  • 7oz (~2cups) fresh or frozen blueberries or alternatively can use 2 tins of drained fruit in juice such as  pineapple, peaches, pears or apricots
  • 4 eggs
  • 1 Tbsp self rising flour (can also used gluten free mix for a gluten free dessert)
  • (can make your own with ~1 Tbsp flour and ~1/8tsp baking powder)
  • 1 tsp vanilla
  • 1 Tbsp maple syrup or honey


  1. Pre-heat oven to 180°C.  Spray a medium size baking dish lightly with oil.
  2. Evenly spread fruit to cover the bottom of dish
  3. Beat eggs in medium size bowl
  4. Add all remaining ingredients and mix
  5. Pour mixture over fruit and bake for ~30min  or until center is firm to touch
