Great tasting, gluten free, high in protein and antioxidants
Serves 4 – Serve with a green salad and grainy roll of you need the extra
Ingredients
1.5 cups cooked and cooled quinoa
3 Tbsp hard grated cheese (I used parmesan and romano)
1 medium red onion, finely chopped
1 red pepper, finely chopped
2 cups spinach, coarsely chopped
1/3 cup feta cheese, crumbled
8 eggs, beaten
½ cup milk
Method
- Spray round or rectangle pan with non stick spray, mix the quinoa and cheese together and press into round skillet that can be in oven
- Preheat oven to 350 F; optional step is to place skillet in oven for ~10min to create a light crust with the quinoa cheese mix
- Place onion in new pan over medium high heat until slightly transparent, add red peppers and spinach, reduce heat to medium and stir occasionally until spinach is wilted
- Spread vegetable mixture evenly over quinoa crust and top with feta cheese
- Add milk to eggs beat until well mixed.
- Slowly pour the egg mixture over quinoa crust and vegetables
- Place in oven for ~30min or until the pan is firm in center
