Great tasting, gluten free, high in protein and antioxidants
Serves 4 – Serve with a green salad and grainy roll of you need the extra



1.5 cups cooked and cooled quinoa
3 Tbsp hard grated cheese (I used parmesan and romano)

Feta and Quinoa Quiche

1 medium red onion, finely chopped
1 red pepper, finely chopped
2 cups spinach, coarsely chopped
1/3 cup feta cheese, crumbled
8 eggs, beaten
½ cup milk


  1. Spray round or rectangle pan with non stick spray, mix the quinoa and cheese together and press into round skillet that can be in oven
  2. Preheat oven to 350 F; optional step is to place skillet in oven for ~10min to create a light crust with the quinoa cheese mix
  3. Place onion in new pan over medium high heat until slightly transparent, add red peppers and spinach, reduce heat to medium and stir occasionally until spinach is wilted
  4. Spread vegetable mixture evenly over quinoa crust and top with feta cheese
  5. Add milk to eggs beat until well mixed.
  6. Slowly pour the egg mixture over quinoa crust and vegetables
  7. Place in oven for ~30min or until the pan is firm in center
