This colourful pasta salad is packed full of antioxidants, protein and long lasting energy. Also a great source of fiber which helps with weight maintenance and bowel regularity. It is quick to prepare and a hit for the whole family, pre- packed lunches or for a BBQ or potluck meal.
Pasta Salad Ingredients
- ½ box smart or whole wheat pasta, cooked and drained
- 1 can chickpeas, drained and rinsed
- ½ large red onion, finely chopped,
- 2 large tomatoes, chopped
- ½ large cucumber, chopped
- 1 head broccoli, cut into florets and lightly steamed
- 4 cups spinach, steamed and chopped
- ½ can black olives, sliced
- 1/3 cup feta cheese, crumbled
- garlic infused extra virgin olive oil, 2-3 Tbsp
- finely chopped cilantro (optional)
- tin of tuna or salmon or grilled chicken breast (optional)
Method
- Combine all ingredients into a bowl, mix well and serve
