This is an easy, quick and healthy meal to enjoy anytime of the day!


2 eggs, mixed with ¼ cup milk
1 medium tomato, chopped
large handful spinach, chopped
1-2 Tbsp feta (crumbled or cubed)
1-2 slices toast (photo has heavy rye flax)


  1. Spray pan lightly with oil; heat on medium high
  2. Pour in eggs when hot, top with spinach and fold gently as egg cooks
  3. Place toast in toaster
  4. Sprinkle feta on eggs; once cooked transfer to plate and top with tomatoes
  5. Lightly spread toast with margarine or butter
