This is an easy, quick and healthy meal to enjoy anytime of the day!
2 eggs, mixed with ¼ cup milk
1 medium tomato, chopped
large handful spinach, chopped
1-2 Tbsp feta (crumbled or cubed)
1-2 slices toast (photo has heavy rye flax)
Method
- Spray pan lightly with oil; heat on medium high
- Pour in eggs when hot, top with spinach and fold gently as egg cooks
- Place toast in toaster
- Sprinkle feta on eggs; once cooked transfer to plate and top with tomatoes
- Lightly spread toast with margarine or butter
