A quick, healthier version of mac and cheese for the whole family!
Ingredients
2 boxes Annie’s macaroni and cheese
1 red onion, finely chopped
1 zucchini, chopped
1 red pepper, chopped
4 handfuls spinach, chopped
1 cup diced ham, dry salami or cooked diced chicken breast (optional)
2 large tomatoes, chopped
Method
- Boil large pot of water and cook noodles as per instructions
- Meanwhile, spray a large pan with oil on medium high heat
- Saute onions for a few minutes, add zuchinni, red pepper and spinach; stir occasionally until spinach wilted
- Drain noodles and return back to large pot, add milk, margarine and cheese packs and stir
- Add the vegetable mixture and diced meat and mix well
- Serve into bowls and top with fresh tomatoes
