A quick, healthier version of mac and cheese for the whole family!


2 boxes Annie’s macaroni and cheese
1 red onion, finely chopped
1 zucchini, chopped
1 red pepper, chopped
4 handfuls spinach, chopped
1 cup diced ham, dry salami or cooked diced chicken breast (optional)
2 large tomatoes, chopped


  1. Boil large pot of water and cook noodles as per instructions
  2. Meanwhile, spray a large pan with oil on medium high heat
  3. Saute onions for a few minutes, add zuchinni, red pepper and spinach; stir occasionally until spinach wilted
  4. Drain noodles and return back to large pot, add milk, margarine and cheese packs and stir
  5. Add the vegetable mixture and diced meat and mix well
  6. Serve into bowls and top with fresh tomatoes
