An easy and colourful way to enjoy a mix of cooked and raw veggies; just add some left over meat or protein and a little quinoa, rice or barley for a complete meal.
Ingredients
1 yellow onion, diced
1 zucchini, quarted and sliced into triangles
12 mushrooms, sliced
½ red and orange pepper, thinly sliced
fresh washed baby spinach
feta cheese to taste
light soy or tamari sauce
Method
- Sautee onion for few minutes on medium high heat in a non stick pan with spray oil
- Add zucchini and mushrooms stirring occasionally until mushrooms cooked
- Lightly drizzle soy/tamari over veggies and mix through
- Fill salad bowl or plate with fresh spinach, top with sautéed veggie mixture and top with feta cheese
