Ingredients
1 yellow onion, diced
1 zucchini, quarted and sliced into triangles
12 mushrooms, sliced
½ red and orange pepper, thinly sliced
fresh washed baby spinach
feta cheese to taste
light soy or tamari sauce

Method

  1. Sautee onion for few minutes on medium high heat in a non stick pan with spray oil
  2. Add zucchini and mushrooms stirring occasionally until mushrooms cooked
  3. Lightly drizzle soy/tamari over veggies and mix through
  4. Fill salad bowl or plate with fresh spinach, top with sautéed veggie mixture and top with feta cheese
