This is an easy meal to prepare for a family dinner or dinner party. This goes great with ice cream, Greek yogurt or on its own. Feel free to use any combination of stone fruit, frozen, canned, berries to simplify the dish for what is available and in season. The dish below could be a combination of apricots and plums or blueberries, cherries and peaches or nectarines.

Ingredients

20 plums, pitted and quartered
2 cans of canned apricots in juice

3 cups oats ( I like to use a ½ combo of large flake and quick oats)
½ cups flour
½ cup brown sugar
½ cup walnuts or almonds, chopped (optional)
2 tsp cinnamon
1 cup non hydrogenated margarine

Method

  1. Place your fruit of choice in a 9×16 pan,; preheat oven to 375 F
  2. In a large bowl combine the oats, flour, brown sugar, nuts and cinnamon
  3. Mix the margarine evenly through using a pastry cutter
  4. Cover fruit with oat mixture and place in oven for ~40min or until bubbly around the edges
