A great salad to celebrate spring and summer! This colourful salad has a variety of taste combinations and textures for your palate and if a good source of vit C which helps enhance the absorption of iron in the spinach. If strawberries are hard to come by use navel oranges.
Dressing can be the vinaigrette below or a store bought poppy seed dressing
Combine with grilled salmon, chicken, beef or tofu for a nutritious meal.
Ingredients
8-10 cups spinach leaves, washed and roughly torn
6-8 strawberries, washed and sliced
½ -2/3 cup almonds, toasted and roughly chopped
1 small or ½ large red onion, thinly sliced
1 avocado, diced
Vinaigrette Dressing
1/3 cup olive oil
2 Tbsp lemon juice
2 Tbsp wine vinegar
1 tsp honey or maple syrup
2 tsp grainy or Dijon mustard
salt and pepper to taste
Method
- Gently toss spinach in a large bowl, top with remaining ingredients
- Drizzle dressing just before serving or on individual servings
